Dark Chocolate Orange Fudge and Cinnamon Apple Fritters

Makes 36 squares

Ingredients:

1½ cups sugar
2/3 cup evaporated milk
¼ cup butter
7 ounces marshmallow cream
¼ teaspoon salt
2 cups bittersweet chocolate chips or chunks
1 cup semi-sweet chocolate chips or chunks
1 teaspoon pure vanilla extract
1 teaspoon pure orange extract
2 tablespoons orange zest, coarsely chopped
 

Directions:

1. Combine the sugar, evaporated milk, butter, marshmallow cream and salt in a medium saucepan and bring to a boil. Reduce the heat to medium and cook for 5 minutes, stirring regularly.

2. Remove the pan from the heat and stir in the two different chocolates. Stir until the chocolates have melted and are well combined.

3. Add the vanilla and orange extracts and orange zest and stir.

4. Pour the fudge into a 9-inch square pan (either buttered well, lined with parchment paper or coated with a non-stick surface), spread out the fudge until smooth and let it cool. When it has set, cut the fudge into squares and enjoy. Store the fudge in an airtight container in the refrigerator.

Cinnamon Apple Fritters
Serves 6

If you make these fritters with apple rings, they look a lot like doughnuts, but inside is a soft warm bite of apple. Substitute any other fruit for the apples for something completely different. Banana, peaches, pears, pineapple and mango all work nicely.

Ingredients:

2 cups flour
1 tablespoon baking powder
½ cup sugar
1 tablespoon salt
1 tablespoon ground cinnamon
2 eggs, lightly beaten
cups milk
tablespoons butter, melted
1 to 3 quarts vegetable or peanut oil for deep-frying
5 Granny Smith apples, peeled, cored and cut into rings or wedges
powdered sugar and maple syrup for serving
 

Directions:

1. Combine the flour, baking powder, sugar, salt, cinnamon, eggs, milk and melted butter in a medium sized bowl. Mix well. Let the batter rest for at least 15 minutes. This will allow the proteins to relax and help prevent a rubbery batter.

2. Fill a deep sauté pan or deep fryer with enough oil to cover the fritters. How much oil will depend on the size of pan you are using, and if you are making rings or wedges. If you are using an electric deep fryer, heat the oil to 375˚ F. If you are using a sauté pan on the stovetop, either measure the temperature of the oil with a deep fat thermometer, or heat the oil until bubbles form around the handle of a wooden spoon when submerged in the oil. You can also just test a little of the batter in the oil to see if it is hot enough - the batter should sizzle and start to bubble immediately.

3. Dip the apple rings or wedges into the batter and gently drop the battered apples into the hot oil. Fry until the fritters are golden brown and crispy, turning once.

4. Drain the fritters on a paper towel and dust with powdered sugar. Serve immediately with maple syrup.
