Apple Latkes
Ingredients:
- 2 idaho potatoes, grated
- 1 granny smith apple, peeled, grated and wrung out in a towel
- ½ yellow onion, peeled, grated and wrung out in a towel
- 1 egg
- ¼ cup matzo meal
- 1 tsps. Salt
- ½ tsp. pepper
- 1 tsp. Chopped sage
- Equal amounts rendered chicken fat and olive oil for frying
Directions:
- Add all ingredients in a bowl.
- Get a heavy bottomed fry pan hot to 325 degrees.
- Add chicken fat and olive oil.
- Drop spoonfuls of potato mixture into oil to fry.
- Flatten with the back of a spatula and cook until golden brown, flip and repeat on other side.
- Remove from pan and cool on a rack with paper towels underneath.
- Do not blot on towels directly.
